Stamppot van Boerenkool

Ingredients

800 grams potatoes
400 grams chopped kale
A 400 gram smoked sausage (I used a Dutch style “rookworst”, but a similar sausage would also do)
1 large onion
200 grams chopped bacon
2 tablespoons of milk
1 teaspoon of vinegar
Salt and pepper

 

Making Stamppot van Boerenkool met Rookworst

Peel the potatoes and cut them into smaller chunks so they don’t take too long cooking. Put them into a pot and cover them with just enough water, add salt and bring to the boil. When the potatoes boil, place the chopped kale on top of the potatoes and the sausage on top of the kale. Boil the whole with a lid on until the potatoes are done (it should not take longer than 20 minutes). In the meantime, chop the large onion and fry it together with the bacon in a pan, just before the potatoes are done. Take the sausage out of the pot, mash the potatoes and kale with two tablespoons of milk, and spice the mash with salt, pepper and a teaspoon of vinegar. I used apple cider vinegar, but you can really use any vinegar you have or like best. Mix in the bacon and onion, serve with the sausage and enjoy!
